Cara memasak SAMBAR VADA (South Indian recipe)

  1. Soak raw rice, urid dhal and chana dhal for 6-10 h.
  2. After 6-10 h, add a little bit of water and grind coarsely. The consistency will be like a thick batter..
  3. Chop onion and curry leaves. Add it to the batter alongside with salt, cumin, coriander powder and chilli powder. Mix well.
  4. Heat up oil. Meanwhile, we can multitask to make the sambar. Using pressure cooker, add toor dhal, sliced onion, tomato, garlic, turmeric and water. Cook for two whistles. Let it cool down then blend until smooth.
  5. Fry vada, you can shape it like a doughnut or just scoop it using spoon straight to hot oil, cook till floating then turn. Normally it takes for 3-4 mins each side. Fry it in batches. Vada can be eaten by its own like fritters..
  6. Back to our sambar, clean the pressure cooker. Add a spoon of oil, add tempering ingredients. Wait until it splattered (I used to hate this 😉). Add the blended dhal, tamarind water, salt and sambar powder. Have a taste! You may need to adjust to your liking. Add the pressure cooker, let it whistle twice. Then the sambar is ready..
  7. Presentation: ladle some sambar soup to a bowl, add few pieces of vada. Let it soaked for 5-7 mins. Garnish with coriander leaves. Enjoy!.
